            Bread and Muffins can increase Lutein intake,necessary for eye health 06/25/2011

            Abstract:

            According to a new study in Spain, bakery products such as fortifying bread and muffins may be suitable vehicle to intake Lutein. Lutein is a xanthophyll compound found in the foods includes Spinach, Kale and egg yolk and has a very old history as a nutrient and supplement in the food industry to reduce the risk of age related macular degeneration that is loss of vision in the centre of visual field (the macula) because of damage to retina. It usually affects older adults

            Objectives:

            The role of lutein in human health has become evident, According to recent health articles, it has become necessary to increase daily intake of lutein, which is currently very low world wide. For example the daily intake of Lutein in United States is 1.74 mg/day and in Europe is 2.24 mg/day. Despites the significant losses of Lutein during processing, the developed fortified baked product still contains reasonable concentration (up to 1mg/ serving) of Lutein.


            The objective of this research was to check the different foods which can intake maximum amount of Lutein compound.

            Design:

            This researcher prepared pan bread, flat bread, cookies and muffins were with high lutein and lutein fortified whole wheat flours. Processing and baking affected the lutein and zeaxanthin content of the bakery products. For example in flat breads all the Trans lutein decreased by about 40%, while the reduction in cookies was about 63%. The loss in muffins was similar, and about 58% of the trans-lutein lost.

            Setting or place:

            Journal of Agricultural and Food chemistry.

            Participants:

            Pan bread, flat bread, cookies and muffins were used for this study.

            Result:

            Despite the loss of lutien during process results of researcher were positive about the potential of fortified bakery to offer lutein-rich products.

            Conclusion:

            In this medical information it is concluded that baked bakery products still have sufficient amount of lutein which reduce the risk of age related macular degeneration.


            Suggestions:

            After reading this research paper we strongly recommend the frequent use of fortified bakery products such as fortifying bread and muffins.This type of food not only Kill your hunger but also fulfill your daily Lutein requirements.

            I typically cut out breads from my diet as much as possible because of the carbs. But this is interesting because I didn't know the benefit of breads and muffins. Thank you.
